Chili Lime Popcorn
A spicy, chili lime kick on traditional popcorn.
Cinco de mayo is THIS WEEK my friends and I think it’s a holiday we can all celebrate. There are hundreds of different food and drink choices we could choose this lovely holiday, but we might as well popcorn a part of it. Hey, popcorn works in every other situation, so why not make it a little spicy?
Before I go into the popcorn, let me tell you a little bit about out weekend. We went to wedding number one of six for this year, and it was a great way to start wedding season off. They ended up with an absolutely gorgeous day and we had such a good time celebrating a great couple.
Now back to this popcorn. Fun fact- I eat stovetop popped popcorn for a snack almost every single night. I’m so exciting, right? One time during my undergrad, my first nutrition professor told us that he and his wife loved popping popcorn over the stove as a healthy night time snack. I’m pretty sure I tried it for the first time that night, and the rest was history.
There is so much to love about popcorn:
It is light, airy, and whole grain.
It’s easy to make over the stove, and doesn’t have any scary chemicals.
A half cup unpopped makes about 4 cups popped, so thats pretty great.
It’s a healthy snack.
You can make it in so many ways (with olive oil and salt, coconut oil and cinnamon, drizzled with nut butter, or like this).
I love finding fun ways to put a twist on popcorn, and this one was GOOD. Try it for this cinco de mayo. Or tonight. Or right now.
- 4 cups popped popcorn
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- juice from one lime
- Pop popcorn according to the package directions. I like to use stovetop white kernel popcorn. About 1/2 cup unpopped equals for cups popped. I personally like to pop mine in about 1-2 tablespoons of olive oil.
- Mix all the spices and toss into the popcorn.
- Squeeze lime juice over popcorn a little at a time, tossing while squeezing.
