The Perfect Sweet Potato Fries

These are no mushy roasted potatoes. These are perfectly crispy AND healthy oven baked sweet potato fries!

Finally! My semester is over and I am pretty much one semester away from finishing my Nutrition program and well on my way to becoming a Registered Dietitian. In the next 12-13 months I will graduate, get married, and hopefully be accepted to a dietetic internship. I can’t wait. In the meantime, I am so excited that I will have some extra time to work on new recipes and ideas. Totally looking forward to testing and trying.

Something I DONT have to test and try are sweet potato fries. These sweet potatoes are a side dish that we have a least once a week with dinner, and they are a favorite. Crispy fries with a bunch a dipping sauces, who could say no to that?

Sweet potatoes are super┬áheathy too- filled with vitamin A, fiber, potassium and more. BUT…no one wants mushy roasted sweet potatoes that are wet and soggy when you bite into them. So, there are a few easy steps to take in order to crisp these babies up and make ’em perfect for dippin.

Step 1-Peel the potatoes and cut as evenly as possible for even cooking.

Step 2-Soak the fries in cold water for at least 45 minutes to an hour. This will remove some of the starch and give them more of a crisping capability.

Step 3- Dry off the potatoes and add the olive oil. But, you don’t want to add too much oil as it could create some soggy potatoes. 1-2 tsps is enough for two potatoes.

Step 4- Add the spices and bake at a high temp, flipping halfway through. You want to flip as quickly as possible in order to keep as much heat in the oven as possible.

Step 4- Eat!

  1. 2 sweet potatoes, peeled and cut into even "fries"
  2. 2 tsps olive oil
  3. 1 tsp paprika
  4. 1 tsp chili powder
  5. 1/2 tsp black pepper
  1. Soak the sweet potatoes in cold water for at least 45-60 minutes
  2. Preheat the oven to 425 degrees
  3. In a large bowl, add the oil and spices and toss to coat
  4. Place potatoes on a baking sheet in a single layer
  5. Bake 30-40 minutes, flipping halfway through
  6. Serve 'em while they're hot
