Berry Quinoa Salad
This is a sweet version of a quinoa salad filled with nuts and berries that would be great for breakfast, a side dish, or to share at a party.
I don’t know about you, but I get stuck in a lot of food ruts. I guess they are not necessarily ruts, but more like kicks where I eat the same foods for the same meals ALL THE TIME until I’m sick of them. Not so much with dinner and lunch, but mainly breakfast and snacks.
Some of these sprees include oats with berries and peanut butter for breakfast, smoothies all the time, homemade pizza Friday’s, hummus on just about anything, and popcorn for a night time snack (going strong since about 2010). Now that I list those out, I guess I’m not really sick of any of them.
What’s my point here? This quinoa salad is my point. I knew I needed to break away from my habits and create something new to have for a breakfast. My parents were raving about a quinoa and berry salad they had for breakfast in Disney World, and I knew I had to recreate my own.
Besides cooking the quinoa, this recipe is completely mindless. Throw all the ingredients in a bowl, stir it up, and eat it. It’s that easy my friends. Besides breakfast, it could also be a good side dish at any BBQ. Its all summery looking and healthy, so who wouldn’t want to eat it?
- 2 cups cooked quinoa
- 1 cup nuts (I used a walnut/almond mixture)
- 2 cups halved strawberries
- 1 cup blueberries
- 1 cup blackberries
- 1 tsp chopped fresh basil
- 1 tsp cinnamon
- 1/4 cup olive oil
- 1 tbsp maple syrup
- 1 tbsp balsamic vinegar
- Juice of one orange
- Toss all ingredients in a large bowl.
- Whisk all ingredients together. Make sure to remove any orange seeds that may have fallen in.
- Pour over salad.
- If you are making this to share at a party, I recommend doubling the recipe.
