Ten Minute Sweet Potatoes for Every Meal

Each of these sweet potatoes takes only ten minutes to make, and theres one for every meal. What could be better?

You know what I don’t really like? I don’t really like when people assign certain foods to certain meals. Why do pancakes always need to be for breakfast? Because I’m pretty sure they taste just as good at dinner time. And why do burgers only work for dinner time? ‘Cause I had an eggs benedict over a veggie burger for brunch recently and it was PRETTY good. Where am I going with this? Sweet potatoes. For some reason I feel like people only eat sweet potatoes for dinner, whether they be baked, in the form of fries, or however.

Newsflash: You can eat sweet potatoes for breakfast. Have you ever tried a baked sweet potato lathered in nut butter? If not, you are seriously missing out. After I wrote this post, I saw that a post from a fellow blogger, Kelsey at Little Bits Of, went viral (!!!) with sweet potato TOAST. Yep, breakfast. You go girl. Not only can you eat it for breakfast, but you can also have a baked sweet potato for lunch and dinner. Three baked sweet potatoes, three ways, for three meals.

The best part? Each of these sweet potatoes only takes ten minutes. It’s summer time. We’re busy, it’s hot, no one really feels like cooking. Just pop these babies in the microwave to “bake” for 7-8 minutes, cut, top, and voila.

Sweet Potato with Nut Butter

Ingredients
  1. 1 large sweet potato
  2. 4 tablespoons nut butter (I used peanut butter, sun butter is great too for nut allergies)
  3. Dash of cinnamon
Optional toppings
  1. Berries
  2. Dark Chocolate Chips
  3. Raisins
Instructions
  1. Poke holes in sweet potato and microwave for 7-9 minutes, or until soft
  2. Cut open the long way, and lightly press down each side with a fork.
  3. Top with nut butter, cinnamon, and any optional toppings of your liking.

  1. 1 large sweet potato
  2. 1/4 cup cottage cheese
Optional
  1. Cucumber pieces
  2. Sliced scallions
  3. Slices of deli meat
Instructions
  1. Poke holes in sweet potato and microwave for 7-9 minutes, or until soft
  2. Cut open the long way, and lightly press down each side with a fork.
  3. Top with cottage cheese and any extra toppings you wish.

  3. 1/4 cup plain greek yogurt
Optional
  1. 1/8 cup black beans
Instructions

  3. Top with avocado and yogurt and any additional toppings you wish.

    i totally agree – eggs for dinner is a COMMON theme in my house. and cold, leftover pizza for breakfast? i’m embarrassed to admit how often that happens 😉
