A blend of pesto, avocado, and chick peas form this creamy pesto avocado hummus, the Green Goddess!
Summer means a lot of pool time, boat time, beach time, whatever you do to enjoy the weather. I love to cook SO much, but summer is a little different. Something about this season just makes me want to be outside, enjoy the sunshine, and relax in the couple months of the year that are less crazy. Between that and the heat, I don’t always want to cook. And I certainly never want to force myself to make dinner and lose my love for cooking. I do, however, love to whip up small dips and apps to snack on while we bask in the sunshine. Snacking is my favorite.
There’s nothing better then being on the water with family or friends, some drinks, and some snacks, am I right? But a lot of the time, the whole day is focused on food. Now don’t get me wrong, I LOVE food just as much as the next person. But why not make something homemade that can be the focus of the day? Most of the time store bought dips contain all kinds of ingredients that we can’t pronounce and probably do not want to put in our bodies. Enter homemade hummus.
Avocado and pesto. I mean, two of the greatest things there are. Mix them together with creamy chick peas into a hummus and its heavenly. Heavenly and packed with health, this hummus has so many flavors. Throw all the ingredients together and blend them and you’re all set. This hummus is perfect to bring for a day by the pool, ocean, or on the boat. Don’t forget pita, veggies, or tortilla chips for dippin’. Plus, how cute is this damn hummus bowl?
- 1 15-ounce can chick peas
- 1/2 an avocado
- 1/4 cup pesto
- 1 tsp chopped fresh basil
- 2 cloves garlic
- juice of one lemon
- salt and pepper to taste
- 1/4 cup water (optional, for blending purposes only)*
- Add all ingredients to a food processor or blender and blend until smooth.
- Optional- top with extra basil and a teaspoon of olive oil.
- *If you have trouble blending, adding water may help.
