Peanut Butter & Jelly Frozen Yogurt Cups

You guys, I have been totally MIA for the last week. I am so sorry! But I’m back with some delish recipes. The reason I’ve been so busy is because it’s summer. And summer just makes it so hard to sit inside and work on the computer. The weather has been absolutely gorgeous and I have been soakin’ up the sun. In the past week alone I had a birthday, went to two concerts, and had a few pool days on top of working. I am loving every minute of it. (Remind me why I live in upstate NY and only get two to three months of this weather…)
Another thing about summer that I love? The food. So much grilling, smoothies just about daily for breakfast, and ice cream. Love me some ice cream. There is an ice cream place by my house that has all kinds of gourmet flavors. Some of them include Mud Pie (coffee ice cream with chocolate chips and oreos), Bananas Foster (bananas cooked in brown sugar turned into ice cream with dark rum), and Salted Caramel Chocolate Pretzal just to name a few.
I started thinking about what I would design as my gourmet ice cream if I had my own signature flavor. It would definitely have peanut butter in it. The base would have to be vanilla, but it would have to have some chocolate in it too. I also love pistachio, so maybe a vanilla pistachio ice cream with peanut butter cups and pretzel pieces. Healthy, right? What would your flavor be?
ANYWAYS- you really can’t eat ice cream like that every day. So, I decided to experiment with a frozen treat that you could eat just about every day. PB&J Frozen Yogurt Cups. These babies are delicious, perfectly sweet, and even have some health benefits. The crust is made of only oats and nut butter, sweetened with a little honey. The rest is greek yogurt, peanut butter, and fruit. A dessert with whole grains, healthy fat, probiotics, and fruit, that still tastes good. What could be better? Even the kiddos will love these!
- 1/4 cup peanut butter
- 1/2 cup rolled oats
- 2 tbsps honey
- 1 tsp butter
- 1.5 cups vanilla greek yogurt
- Dollops of peanut butter and cut berries for topping
- Melt the peanut butter in the microwave for 20 seconds.
- Mix peanut butter, rolled oats, and honey in a bowl.
- Grease muffin tins with the butter, and press the oat mixture evenly throughout 6 muffin tins.
- Add the yogurt to the top of the crust, spreading evenly throughout the 6 cups.
- Place a dollop of peanut butter and cut up berries to top.
- Freeze for at least 2 hours before eating.
