Sweet Potato French Toast

French toast minus the bread, this Sweet Potato French toast is so sweet, delicious, and can be topped with a ton of different things. This recipe is also gluten free and vegetarian!

I feel like sweet potatoes have really come into their own in the past few years. I don’t really remember having too many sweet potatoes as a child, and I’m pretty sure my grandparents still aren’t too sure what to do with such a thing. But, there are so many things you can do with with this simple orange veggie. One of my favs? Sweet potatoes fries of course, because they’re fries. Theres also sweet potato tater tots, sweet potato curry, sweet potato muffins, the list could go on and on. Do you think I could say the word “sweet potato” one more time there?

Recently, sweet potatoes have been making their debut in breakfast dishes and I am loving it. They have been found in toast, sweet potatoes with eggs, whatever. So I was thinking…why can’t we turn them into french toast? Welp, after some trial and error, I’ve done it. After baking a sweet potato in the microwave, it is sliced, soaked, and grilled like a traditional french toast. They are so much sweeter then typical french toast slices and this dish will certainly be making more appearances in our household!

After frying these babies up, my wheels started to turn about what I could top them with. There are so many things that can be added to traditional french toast that would also be perfect on these slices. Berries, bananas, candied bananas, dark chocolate chips, homemade whipped cream, nut or sun butter, the options are ENDLESS. Please make this and show me what you top them with, I promise you will not be disappointed!

Ingredients
  1. 1 large sweet potato
  2. 1 tbsp butter
  3. 1 egg
  4. 1/4 cup almond milk
  5. 2 tbsps cinnamon
  6. 1 tbsp maple syrup
Optional
  1. Nut butter, fruit, and extra maple syrup for topping
Instructions
  1. Poke holes in the sweet potato and microwave for about 9 minutes, or until soft
  2. Let the sweet potato cool for a few minutes, and then slice it the long way into about 1/4 inch thick slices.
  3. Add the egg, almond milk, cinnamon, and syrup to a shallow bowl and whisk gently.
  4. Put the slices of sweet potato into the bowl and let soak for about 10 minutes.
  5. While the potatoes are soaking, heat the butter in a large skillet or griddle over medium heat.
  6. Place the potatoes on the skillet and cook for about 5 minutes or until golden.
  7. Serve with the toppings you desire, including nut butter, syrup, chocolate chips, or fruit.
