Peanut Butter and Jelly Cookies

These cookies were my great grandmothers original recipe and they are perfect for any type of holiday get together. Who doesn’t love Peanut Butter & Jelly?

My semester is over and it’s Christmas time. Seriously, what could be better? I am loving the Christmas activities, parties, baking, wrapping, decorating, and everything else this season entails. Since I was little, Christmas was my favorite time of year. I love that it’s pretty much the only chance I get to see my entire family (Although this year there will be a wedding!!).

In order to get in the spirit this weekend, I put on some Christmas music and did some baking. I even got Ryan involved, which is rare, but it really made my day. About a year ago when my great grandmother passed, I was given a recipe booklet she kept. Well, I decided to bust in out this year for some cookie recipes. Let me tell you, these recipes did not disappoint. No, these are not a “healthier” version. But. they are absolutely delicious. Dont forget, everything fits into a healthy diet!

These are her twist on original peanut butter cookies. Not only did she add rolled oats, but there is also a perfect dollop of jelly in the middle of each cookie. Really though, who doesn’t like PB&J? These are a perfect edition to a work luncheon, christmas eve, or just to make and eat yourself. Don’t forget the glass of milk!

Peanut Butter and Jelly Cookies

Ingredients
  1. 2 1/4 cups unbleached flour
  2. 1/2 cup sugar
  3. 1/4 cup brown sugar
  4. 1/2 tsp. baking soda
  5. 1/2 tsp. salt
  6. 1/2 tsp. cinnamon
  7. 1/4 tsp. nutmeg
  8. 1.5 sticks unsalted butter, melted
  9. 1 cup peanut butter, melted
  10. 1/2 tsp vanilla
  11. 1 egg
  12. 1 cup rolled oats
  13. ~ 3 tbps. grape jelly
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a large bowl, combine all ingredients except on cup of the flour and the rolled oats.
  3. Slowly stir in the oats and leftover flour.
  4. Shape into 1 inch balls and place 2 inches apart on an engrossed cookie sheet.
  5. Flatten with a fork, and place about 1/8 tsp jelly in the center of each cookie.
  6. Bake 13-15 minutes until light golden.
