No Bake Coffee Peanut Butter Energy Bites

These no bake energy bites can be modified any way you like ’em, and are the perfect snack for busy days. The best part? No. Cooking. Involved.

You guys, it has been so cold outside. I don’t know about you…but I HATE being cold. I’d rather be hot any day. Ah. get me to summer. The good news, I leave in a little over a week for my Bachelorette trip to MIAMI! I cannot wait. Even though it’s still absolutely freezing outside, my winter break has FLOWN by and I am headed back to take a few classes at school next week. These two classes will keep me busy until my wedding in June, and my internship in September. Final countdown to being a Registered Dietitian.

Going back to school means busier days and more meal planning. I need to make sure to have plans for at LEAST two snacks and lunch thoughout the day, and maybe more depending on how long I am gone for. If I am hungry I find it difficult to focus and get through the rest of my day. Hangry is a real condition.

These no bake bites can be whipped up in just about ten minutes, and are perfect for snacks throughout the week. They can be tailored to however you like. For this batch I used peanut butter and pumpkin seeds, but feel free to change it up. Almond butter would be just diviiiiine. Sun butter would work well too, especially for those who have nut allergies. You can also add different things besides pumpkin seeds, like other nuts, seeds, and chocolate chips.

These babies are edible right when you make them, but they stick together best after a little time in the refrigerator. They can be rolled into balls, or pressed into a brownie pan with wax paper and cut into squares. Happy (not) baking!!

Ingredients
  1. 1 cup oats
  2. 1 half cup peanut butter (can sub another nut butter or sunflower seed butter)
  3. 1/4 cup roasted pumpkin seeds
  4. 1 tsp chia seeds
  5. 1/2 cup honey
  6. 1 tbsp ground coffee
  7. Optional-
  8. Dark chocolate chips
  9. Other seeds
Instructions
  1. Add all ingredients to a bowl and stir well.
  2. Either roll into balls, or press into a pan with wax paper and cut into squares.
  3. Can eat immediately, but they stick better with a little refridgeration!
Notes
  1. Can store for up to a week in the fridge.
